Branzino with veggies

Branzino is one of my favorite types of fish to cook at home. It is also known as European Bass, White Salmon or Common Bass.
This easily prepared fish is just the thing to get more fish in your diet.

 

A Mediterranean diet full of fish, olive oil and vegetables is widely considered one of the most healthy and sustainable diets. This time I baked the branzino with garlic, lemon, basil leaves and salt. I served the fish with grilled eggplant, zucchini and red peppers.

Ingredients needed:

• 1 small Branzino fish
• 2 tbsp extra virgin olive oil
• 2 garlic cloves- sliced
• 1 lemon
• 1/2 cup fresh basil
• sea salt and freshly ground black pepper to taste

Directions:

Step 1. Preheat oven to 400 degrees F (204 C). Rinse fish, pat dry. Line a baking pan with foil wrap and spray with cooking oil (for fast clean-up).
Place fish onto a pan. Stuff the fish cavity with the garlic slices, 2 to 3 lemon slices and fresh basil. Season the outside of the fish with some salt and pepper. Bake until the fish is flaky and just fully cooked through, ab
